How to make pancakes without eggs, milk and butter?
How to design vegan pancakes, that is to say without the butter which comes from the creaming of the milk of the cows, without the eggs produced by our dear hens, and of course without the milk conceived from cows which come therefore to have had a calf, which one removed from the mother's udder (you have to think about it)?
To be able to do without these ingredients, we need alternatives.
Here is the list of ingredients for it:
- 400g of classic flour (T55 flour),
- 125g of cornstarch,
- 65g of margarine (from vegetable oils),
- 30ml of sunflower oil,
- 1L of water,
So, as you can see, the milk was simply replaced by water, the eggs were replaced with cornstarch and instead of the butter we took margarine.
We gradually heat a pancake pan, after having put a dab of sunflower oil in it and spread it with paper towel. The temperature is increased every two or three minutes from 60 ° C to 80 ° C, then from 80 ° C to 100 ° C. At 80 ° C we will iron the piece of paper towel soaked in olive oil on the pan. By doing this, we try to prevent the first pancake from sticking to the pan and burning; then the pan should be cleaned and oil applied again, not to mention the burning smell in the kitchen. We put a ladle filled with 90% (or full) of our mixture on the pan. Each time, you have to wait for the edges of the pancake to fold back on themselves (that is to say about a minute). We turn the pancake over, and let it cook on the other side for 30 seconds.
In the end, we will have pancakes with a more neutral taste, not brittle. However, they will be a little sticky, and not suitable for making simple pancakes with sugar and cinnamon. It would be better to cover them with a garnish like Nutella, apricot jam, or a mixture of chicken and burger sauce, a mixture of tuna and tomato sauce, sardines, mackerel, spinach with melted cheese or crème fraîche. It is better to consume them during the day, because by putting them in the fridge for a few hours, they become more brittle.
By being much less calorific, you will see that you will not feel the usual heaviness of traditional pancakes, at the level of the heart, especially if you appreciate greediness and that you are used to eating 10-15 pancakes in one meal.
